Ingredients

  • pickle brine – 1 glass
  • sugar – 1 glass
  • sunflower oil – 0.5 glasses
  • plain flour – 3 glasses
  • bicarbonate of soda – 1 tsp
  • vanillin – optional

Method

  1. Step 1

    The canned tomatoes were eaten, but the brine remained. Shouldn't good things go to waste? You can make delicious crispy homemade biscuits from the brine. What's more, the recipe is so easy and quick that you'll be making it every time you have leftover brine.

  2. Step 2

    Pour vegetable oil into the brine. I used olive oil, but the classic version uses sunflower oil - so you can use both the first and the second. Add sugar, mix, add soda, vanilla and flour. You may need a little more flour, the dough should be soft and not stick to your hands.

  3. Step 3

    Knead and roll out to a thickness of about 8 mm. We cut it out with molds, or just a glass, or cut it into diamonds - it’s up to your imagination!

  4. Step 4

    You can line the baking tray with parchment or, like I did, use a Teflon baking tray. Place the biscuits at a short distance from each other.
