Ingredients

  • For the dough:
  • eggs – 2 pcs
  • sugar – 200 g
  • vanilla sugar – 10 g
  • melted butter – 100 g
  • kefir – 200 ml
  • plain flour – 320 g
  • baking powder – 2 tsp
  • salt – a pinch
  • Filling:
  • plums – 800 g
  • cornflour – 1 tbsp
  • Streusel:
  • plain flour – 100 g
  • sugar – 70 g
  • butter – 80 g

Method

  1. Step 1

    Start with the batter. Whisk the eggs with the sugar and vanilla sugar for 5–7 minutes, until thick and pale. Beat in the melted butter.

  2. Step 2

    Pour in the kefir and mix briefly with the mixer.

  3. Step 3

    Stir the baking powder into the flour and fold it into the wet mix, with the mixer if you like.

  4. Step 4

    When everything is combined, pour the batter into a tin lined with baking parchment.

  5. Step 5

    Stone the plums and set them on the batter, skin-side down. Dust with starch.

  6. Step 6

    Scatter the streusel over the top. Rub flour, sugar, vanilla sugar and cold butter to crumbs — a blender is handy, or grate well-chilled butter.

  7. Step 7

    Bake at 190–200°C for about 60 minutes. A wooden skewer should come out dry.

  8. Step 8

    Sprinkle the top with streusel. For it, mix flour, sugar, vanilla sugar and cold butter. It’s convenient to mix everything into crumbs in a blender, but you can knead it with your hands. The butter can be frozen a little and grated on a coarse grater.

  9. Step 9

    Place in the oven to bake at 190-200°C for about 60 minutes. We check the readiness of the pie with a wooden skewer - it should remain dry.
