Sugar-braid kefir biscuits from childhood

Kefir biscuits you can cut any shape — the sugar braids look lovely. Store-cupboard ingredients, ready for tea.

Ingredients

  • kefir – 130 ml
  • egg – 1 pc
  • sunflower oil – 80 ml
  • sugar – 100 g (of which 3 tbsp in the dough)
  • plain flour – 300 g
  • bicarbonate of soda – 0.5 tsp
  • salt – a pinch

Method

  1. Step 1

    Pretty kefir biscuits, and they come together quickly.

  2. Step 2

    Stir the bicarbonate into the kefir and set aside — it will fizz.

  3. Step 3

    In another bowl whisk the egg, 3 tablespoons of the sugar, salt and oil on high speed until pale and even.

  4. Step 4

    Pour in the kefir, mix, add the flour and bring to a soft dough.

  5. Step 5

    Halve the dough, roll into sausages and cut into pieces — about 40 biscuits, 8–10 cm each.

  6. Step 6

    Roll each piece into a ball, then a 20 cm rope.

  7. Step 7

    Fold in half and plait the two strands over each other.

  8. Step 8

    Repeat. Dip each plait in sugar on all sides.

  9. Step 9

    Set on a tray lined with baking parchment (a Teflon sheet keeps the tray clean).

  10. Step 10

    Bake 20 minutes at 180°C.
