Ingredients

  • For the dough:
  • eggs – 3 pcs
  • sugar – 200 g
  • kefir – 125 g
  • sunflower oil – 125 g
  • plain flour – 2.5 glasses
  • baking powder – 16 g
  • lemon – 1 pc
  • Cream:
  • eggs – 2 pcs
  • sugar – 100 g
  • vanilla sugar – 1 pack
  • plain flour – 1 tbsp
  • milk – 250 ml
  • butter – 50 g
  • lemon juice – 1 tbsp

Method

  1. Step 1

    I will tell you how to make the pie in a step-by-step recipe. It is prepared easily and simply.

  2. Step 2

    First we will cook the custard. Grind the eggs with sugar, add vanilla sugar and flour. Mix everything well and add milk. Place over medium heat and, stirring constantly, bring to a boil. Cook for about 5 minutes on low heat. Don't stop stirring, otherwise lumps will form.

  3. Step 3

    Remove from heat, let cool to room temperature and add 1 tablespoon of lemon juice, or you can take lemon extract. Mix. Add softened butter and mix thoroughly until smooth. This custard recipe can be taken into account for making cakes.

    Set the cream aside, covering with cling film. Let's do the test.

  5. Step 5

    Grind the eggs with sugar, add kefir (you can use soured cream or pure yogurt). Pour in vegetable oil, I used olive oil, but you can also use sunflower oil.

  6. Step 6

    Add the chopped zest of 1 lemon along with the juice - it is perfectly crushed in the blender bowl.

  7. Step 7

    Sift the flour and sprinkle baking powder on top. Knead the dough well and send it to a form previously covered with parchment. Grease the parchment with oil and lightly sprinkle with flour. The size of the mold is 22-24 cm. We level the dough evenly over the mold.

  8. Step 8

    Place the cooled cream in a pastry bag; if you don’t have one, you can use a regular thick bag, the edge of which is cut off.

  9. Step 9

    Squeeze the cream onto the dough, drawing a lattice. Lightly press the cream into the dough.

  10. Step 10

    Bake in an oven preheated to 180° for 30-35 minutes.
