To prepare fish according to this recipe, any non-fatty fillet is suitable, I took pelengas (mullet), but hake, for example, will work perfectly. Thanks to vegetables, the fish is filled with their aroma, and the delicate sauce maintains tenderness and juiciness.

You can buy ready-made fillets, or you can fillet the fish carcass yourself - to do this, you need to cut it along the ridge with a sharp knife and carefully remove it from the bones. If you keep the carcass in the freezer for 15 minutes, the cutting process will be much easier.

Sprinkle the fillet with fish seasoning and leave for about 20 minutes. If you use the seasoning with salt, you do not need additional salt. I used seasoning without salt, so I added salt to taste. If there is no seasoning, it doesn’t matter, you can use your favorite spices, for example coriander, dried garlic, ginger are great for fish.

Cover the baking tray with baking parchment. You can put small sheets of pita bread under the fish, and then everything else - so you can eat it like a ready-made sandwich. Place onion, cut into rings, on parchment or pita bread.

Place the fillet on top of the onion, skin side down. Place tomato slices on the fillet.

Sprinkle grated cheese on top. Gently spread the sauce onto the cheese with a spoon: mix soured cream, mustard (ready-made, not powder) and chopped garlic.

That's it - put it in an oven preheated to 180° for 30 minutes until the top is browned. We look at your oven - after all, everyone’s oven is different and the baking time may vary.
