Ingredients

  • butter – 200 g
  • sugar – 200 g
  • eggs – 2 pcs
  • bicarbonate of soda – 0.5 tsp
  • vinegar – 1 tbsp
  • plain flour – 3 – 3.5 glasses
  • jam – 200 ml

Method

  1. Step 1

    To prepare shortcrust pastry we need a mixer. The butter must be taken out of the refrigerator in advance and left at room temperature for a couple of hours - it should become soft and pliable. There is no need to melt it, just soften it. To make the butter softer faster, you can cut it into small pieces or grate it.

  2. Step 2

    Beat softened butter with sugar for about 7-10 minutes until the sugar dissolves a little.

  3. Step 3

    Add 2 chicken eggs to the beaten mass and mix with a mixer until smooth.

  4. Step 4

    We extinguish the soda with vinegar and add it to the butter and eggs, mix with a mixer.

  5. Step 5

    Gradually add flour. It will be easier to use a mixer to knead the dough, but you can also use your hands. If you do not have special attachments for dough, then add 2 cups of flour to the whipped mass and mix with regular whisks at low speed so that the flour combines with the rest of the ingredients. Then gradually add the rest of the flour. I used about 3.5 cups of flour - but the amount may vary depending on the size of the eggs used for the dough. The dough should be quite dense, but elastic. It shouldn't stick to your hands.

  6. Step 6

    Divide the dough into 2 parts, approximately 40/60. Roll out most of it on baking parchment or a baking mat to about 7-10 mm thick, no more. A layer of dough that is too thick will not be crispy. If you want softer biscuits, then you can make the dough a little thicker. Transfer the layer of dough directly with the paper onto a baking tray.

  7. Step 7

    Spread jam on the dough. I used blackcurrant jam, but you can use any other non-liquid jam or jam. Carefully spread over the entire surface in a thin layer.

  8. Step 8

    Rub the remaining dough on top of the jam using a coarse grater. If the dough does not rub well, add more flour to it.

  9. Step 9

    Place the pie in an oven preheated to 200°C for 25-30 minutes. Bake until golden brown. After 25 minutes, you can turn off the oven and leave the pie in it until it cools; it will brown a little more and become more crumbly.
