Ingredients

  • Dough:
  • plain flour – 550 g
  • water – 150 ml
  • milk – 150 ml
  • butter – 70 g
  • eggs – 1 pc
  • sugar – 70 g
  • dried yeast – 7 g
  • sunflower oil – 70 g
  • Filling:
  • cocoa – 2 tbsp
  • cinnamon – 1 tsp
  • butter – 50 g
  • Icing:
  • mascarpone – 150 g
  • milk – 70 ml
  • icing sugar – 70 g

Method

  1. Step 1

    Stir yeast and sugar into the flour. Add butter, 1 egg, water and milk; whisk. Add the oil and knead to a smooth dough.

  2. Step 2

    Put the dough in an oiled bowl, cover with cling film and leave 1 hour, until doubled.

  3. Step 3

    Oil the worktop, turn out the dough, shape a ball, then roll into a square about 5 mm thick.

  4. Step 4

    Soften (don’t fully melt) the butter and spread it over the dough. Mix sugar, cinnamon and cocoa and scatter over, leaving a 1 cm strip on one side.

  5. Step 5

    Roll up, enclosing the filling.

    Cut into 1 cm slices and set on a tray lined with baking parchment.

  7. Step 7

    Bake at 180°C for 25–30 minutes. Check with a skewer; adjust for your oven.

  8. Step 8

    Meanwhile whisk or blend mascarpone, milk and icing sugar to a smooth icing.

  9. Step 9

    Brush the hot buns with icing, cool on the tray, then eat — chocolate, cinnamon and a curd-cheese icing.
