Ingredients

  • wheat – 4 glasses
  • water – 8 glasses
  • poppy seeds – 200 g
  • walnuts – 2 glasses, chopped
  • raisins – 200 g
  • honey – 0.5 l

Method

  1. Step 1

Drain the water in which the wheat was soaked and add boiling water. Place on the fire and cook after boiling for 20 minutes until done - cooking time depends on the type of wheat. The grains should be soft, but not boiled. The ideal proportion of grain and water is 1:2, i.e. For every 1 cup of wheat, 2 cups of water.

  2. Step 2

Add honey to the hot, ready-made wheat; it will just melt and, as it cools, saturate the wheat grains with its sweetness. You can adjust the amount of honey to your taste. For me, 0.5 liters of honey per 4 cups of wheat is ideal.

  3. Step 3

While the grain is cooking on the fire, prepare the nuts. Before chopping, it is advisable to dry the nuts in the oven for 10 minutes at 180 °C. This way we can easily remove the top peel, leaving only the white sweet middle. The peel, when soaked in kutya, will not give a bitter taste. Grind the peeled nuts with a knife or blender, but not into crumbs.

  4. Step 4

Fill the raisins with hot water and rinse, then drain the water and dry slightly.

  5. Step 5

Grind poppy seeds in a mortar or coffee grinder. This will prevent the poppy seeds from crunching on your teeth.

  6. Step 6

After honey, add nuts, poppy seeds and raisins to the wheat. Mix everything thoroughly and leave until completely cooled and soaked.

  7. Step 7

When the kutya has cooled down, it is ready. Kutya can be decorated with candied fruits, nuts, tangerines or other sweets. On Christmas Eve you need to visit your godparents with delicious kutia and wish them health!
