Ingredients

  • mullet – 1 kg
  • onion – 1 – 2 pcs
  • carrot – 1 – 2 pcs
  • tomato purée – 4 tbsp
  • water – 300 ml
  • salt – 0.5 tsp
  • sugar – 1 tsp
  • ground black pepper – 0.5 tsp
  • coriander – ¼ tsp
  • flour for coating
  • sunflower oil for frying

Method

  1. Step 1

    The main thing in this dish is the sauce. The taste of the fish will depend on its taste. But let's start the cooking process with fish.

  2. Step 2

    The fish must be cleaned of husks and giblets, the head and fins must be cut off. We clean the insides well, especially the black film - all of it needs to be removed, it gives off bitterness.

  3. Step 3

    Cut the fish carcasses into large pieces. I had 3 fish of 300-350 g each, so I cut each one into 3 parts. Rub the fish with salt and pepper using half the portion indicated in the recipe, the rest will go into the sauce. Leave for 15 minutes.

  4. Step 4

    At this time, prepare the vegetables. Peel the onions and carrots. If the onion and carrots are large, then one at a time is enough, if small, then 2. Cut the onion into cubes, grate three carrots. Dilute the tomato paste with warm water and add the remaining spices.

  5. Step 5

    Roll each piece of fish in flour and fry in heated vegetable oil until golden brown. Place the fish in a saucepan and cover with a lid.

  6. Step 6

    Meanwhile, prepare the sauce. Fry the onion in vegetable oil, add carrots and fry until tender. When the carrots are ready, add tomato paste with spices, bring to a boil and pour the prepared sauce over the fish.

  7. Step 7

    Over medium heat, bring the fish and sauce to a boil, reduce the heat and simmer for 15 minutes.
