A bag of walnuts is already open — and the hand hides it in the cupboard above the hob “so it doesn’t get in the way”. Easy: by the month the nuts smell of warm oil, they taste bitter in a cake. I tip them into a quiet bowl on the table in the cool — visible, the hand takes, they don’t sweat in the steam.

A quiet bowl of walnuts on the table — not in a warm cupboard. Nuts in the cupboard I smell for rancid is another note; a bowl of apples its own; a bowl of lemons another story. Here it’s the walnuts on the table themselves: cool, air, a bowl — not a lecture about “omega and health”.

I smell honestly: paint or fish — into the bin, not into the batter. A small handful we will finish, not a sack “in reserve” by the oven. I’m not reviewing a new variety with a tasting in this note — it’s about the handful that already sits at ours.

I don’t need nuts that sweat in a warm cupboard and spoil a pie. I need a bowl on the table from which tomorrow’s salad still smells of walnut. At yours do walnuts lie cool in sight — or already warm above the hob?
